The British Society of Baking (BSB) has revealed details of its annual Spring conference, to be held next month.

It will include sessions on Marks & Spencer’s instore bakery philosophy, and the changing requirements for labelling, as well as a bakery-themed Dragons’ Den.

The event, which takes place from 9-10 April, kicks off with a dinner at the Hilton Hotel in Leicester, followed by a day of conference presentations at Leicester College.

David Powell will give an insight into a bakery study trip to China, which he jointly organised last year, before Nathan Giles of Mr Bagel explores fermentation by yeast and sourdough cultures in breadmaking.

The day will also include a discussion forum, and a talk from Bettys on maintaining high standards.
