Leading bakery and finished goods supplier Lantmännen Unibake UK is the first to commit to the Department of Health 2017 salt pledge.

The pledge will mean the supplier will build on its commitment to government salt reduction schemes by exploring new solutions to production, which do not compromise taste or quality.

Mollyanne Trumble, technical manager at Lantmännen Unibake UK, said: “We are embarking on an extensive project to identify the optimum solution, involving innovative technical approaches, kitchen tests, collaborations with ingredient suppliers and close liaison with our customers.

“We are actively committed to the 2017 salt pledge and will remain focused on identifying suitable solutions to ensure that we maintain the best flavour, quality and consistency in our product range, while achieving the required salt level targets.” 

This will require innovation, due to the functional role which salt plays in controlling the growth rate of yeast, and enhancing overall flavour.
