Foodservice supplier Coup de Pates has announced that Fabrice Prochasson will join the company as its new director of creation and innovation.

Prochasson, who is nicknamed the ‘travelling creator’, has been the one-time holder of France’s highest pastry honour – the best craftsman of France – and has worked in cities such as New York, Beijing, Tokyo and Athens.

He joins the premium foodservice supplier, with the UK market in his sights and will be tasked with building on the company’s portfolio of products, using his experience and vision to push the boundaries in frozen bakery.

Prochasson commented: “I’m delighted to join Coup de Pates – a name held in such high regard with so many chefs in France, now making waves in the UK. This country is in the middle of something very special, it’s an amazing time to be a chef and involved with food – the levels of knowledge and innovation have never been so high, which is one of the reasons I just had to be a part of it.

“I hope to help Coup de Pates build on their chef-to-chef relationships while ensuring French gastronomy continues to play a leading role in helping shape the innovative UK market.”

The new director of creation and innovation will be demo-ing live in the UK for the very first time when Coup de Pates return to Omnivore World (21-23 October 2016) a three-day festival of cooking demonstrations and pop-up restaurants taking place across East London.

In July, Coup de Pates unveiled two new patisserie lines at the Taste of London food festival.
