Adding value with inclusions
Renshaw (Liverpool, Merseyside) offers a range of ingredients to help bakers make value-added cookies.
The company recommends adding its bake-stable, dark chocolate flavour chips to any of its basic cookie dough, pucks or mixes to make chocolate chip cookies. The chips are said not to lose their flavour during cooking and to offer a good shelf-life. They are available in 12.5kg bags.
Blending Luxury Caramel through a plain cookie mix will give toffee-flavoured cookies. Alternatively it can be drizzled over the top. A fresh summer taste can be obtained with the use of Double Cut Peel.
This is made from selected orange and lemon peel, diced into 4mm x 4mm pieces, says the supplier.
