Scots’ 40 Group

Industry body Scottish Bakers has re-established its 40 Group, which is open to all managers and directors in the bakery sector who are under the age of 40. Its first meeting will take place on 17 January at Atholl House in Edinburgh at 1pm.

Call for salt research

The baking industry has called for further research into the role of salt in bread, following reports the government wants to scrap salt reduction targets in 2012. Gordon Polson, director of the Federation of Bakers, said the industry "cannot reduce salt beyond the 2012 targets".

Egg commitment

Bakery ingredients supplier BAKO has promised all its own-label egg products will be fully compliant with new EU legislation by 1 January. The law means egg suppliers will have to use enriched cages, larger than battery types, providing perches and room for nesting.

Festive export deal

In its first ever export contract, craft bakery Dorringtons, based in Sawbridgeworth, Herts, has supplied 2,000 handmade festive fruit cakes to an upmarket online retailer in Germany called Hagen Grote.
