The British palate is becoming more adventurous, as influences from all over the world are hitting the UK, according to research carried out by the Proper Cornish Food Company.
The pastry snack market is showing a growing interest in international flavours, particularly Mediterranean and Mexican. Vegetarian and fish options are also becoming increasingly popular.The research conclusions are taken from last month's entries into a Proper Cornish Food Company competition to find a new pasty flavour.The national competition received over 1,200 entries. The overall winner, however, was a British classic: Fish, Chips and Mushy Peas. Other British entries included Lamb and Mint, StickyToffee Pudding and Shepherd's Pie.Twenty-three per cent of entries suggested exotic, Mediterranean fillings such as Pesto, Sun-dried Tomatoes and Mozzarella. Mediterranean was such a popular theme, according to the company, that three out of the top 10 favourite flavours included Feta Cheese with Roasted Vegetables, Spaghetti Bolognese and Pizza. Mexican and Asian flavours were also very popular, with Chilli the fourth most-suggested filling and Oriental Duck the seventh.Phil Ugalde, Proper Cornish Food Company's managing director, said: "Demand for a variety of flavour options is on the increase. The competition to find a new pasty filling has given us a wonderful insight into current flavour trends and highlighted a number of themes."
