Unifine Food & Bake ingredients has launched a Liquid Binding Agent (LBA), which uses new technology for the enhancement of biscuits and extruded lines.

The emulsified sugar product has a natural flavour and can be used to bind inclusions such as seeds, fruit and nuts into a mix, which can then be machine-extruded and cut for the manufacture of products such as biscuits. The firm says it is particularly effective when used for dual extrusion, where a central core of dough, containing the LBA mixed with fruit, nuts and other ingredients is taken through the process together with the dough for the cookie rim.
