Fiona Cairns and McVitie’s tasked with royal cake baking

Fiona Cairns and McVitie’s Cake Company have been tasked with making cakes fit for royalty at the wedding reception of Prince William and Kate Middleton.

Trained as a graphic designer as well as a pastry chef, Cairns makes celebration cakes, biscuits and fairy cakes for the likes of Harrods, Selfridges, Waitrose, Sainsbury’s and Fortnum & Mason.

She has been commissioned by the couple to create a ‘multi-tiered traditional fruit cake lavishly decorated with a floral theme’, according to The Press Association, which will be the centrepiece at the Buckingham Palace wedding reception.

The cake will feature cream and white icing, and will be decorated with William and Kate’s new cipher – thought to feature the couple’s entwined initials – which will be officially released on their wedding day.

Joining Cairns' cake at the reception, will be a McVitie’s Chocolate Biscuit Cake, which is being specially made for Prince William, as it was a favourite childhood tea-time treat of his.

The McVitie’s Cake Company, now part of the United Biscuits Group, has made many cakes for weddings and christenings of members of the Royal family since the marriage of His Majesty King George V to HM Queen Mary.

“We are delighted and honoured to agree to be part of the wedding of Prince William to Miss Catherine Middleton, which will enable us to continue our proud heritage and association with royal weddings,” commented the firm.

It cannot divulge details of the recipe of the design, but has confirmed it will be making the chocolate biscuit cake for the wedding reception, plus a few hundred buffet slices to the same recipe. In total these will contain 17kg of chocolate and approximately 1,700 McVitie’s Rich Tea biscuits.
