American chef and duffin inventor Bea Vo will launch Butterscotch Bakery in Shepherd’s Bush, London this summer. 

Butterscotch, a new bakery and tea room concept, will operate as an online shop until then. Vo invented the duffin (a doughnut/muffin hybrid) in 2011.

She also founded the bakery Bea’s of Bloomsbury (now Bea’s), which she left to set up a diner called Stax.

Along the same vein as her restaurants Stax, Boondocks and Famous Flames, Butterscotch Bakery will showcase Vo’s American roots, with offerings including layer cakes, pies, cobblers, brownies, marshmallows and cupcakes.

Butterscotch Bakery will operate as an online shop from 20 March while construction work takes place, with collections available from Boondocks restaurant in East London.

For Mother’s Day, there will also be a pop-up tea room at Boondocks offering afternoon tea for £24.95 (£29.95 with Prosecco). The menu for this will include cupcakes, scones, brownies and sandwiches.
