Birds of Derby bakery has opened its 56th shop, with a new-look design created by a local shop fitter.

The business worked to create an open style design, so customers can see baked goods being freshly prepared.

The 500sq ft shop opened last week in Borrowash, Derby, and the bakery said it had been well received by the local public.

Mike Holling, retail director Birds of Derby and executive director of the Craft Bakers’ Association said: “we are very pleased with it, it looks modern and light, but we have still got some traditional tiling.

“We are always looking for new units but we just felt we’d do something different this time. You can see the preparation area and ovens from the counter- we just thought it would be good for customers to witness how everything is done.”

The bakery has also recently been awarded the title of "best mince pie in Derbyshire" by readers of the Derbyshire Telegraph. Holling said they would have sold a grand total of 400,000 mince pies this year by the end of Christmas eve. Last year the bakery sold 31,875 on Christmas eve alone. 

He also said they would sell 55,000 pork pies, “come Christmas eve we will have queues going outside the door,” he commented.

The new shop is open Monday to Saturday, and will be offering an exclusive deal of sausage cob with stuffing and apple sauce and a coffee for £3, at the Borrowash store.
