Gail’s reveals 20th bakery location

Gail’s Artisan Bakery is to open its 20th site in Temple Fortune, north-west LondonBritish Baker has learned.

The new site will open in ‘late spring’, and will be designed to reflect the near-by area of Hampstead Heath.

Tom Molnar, joint founder of the business, said: “We are going to bring some of the heath in; there will be a lot more vegetation and we are going to have bigger windows, so you feel like you’re on the heath.

“Part of what we offer at Gail’s is not just really great product, but a cool environment. I have to love the area and the building a little bit. There’s something really cool about each neighbourhood.”

This comes as the business has appointed a new deputy managing director. Barry Cook, formerly head of operations at Aubaine restaurants, and foodservices manager at Ikea, has joined the bakery group.

Cook commented: “I am thrilled to have joined GAILs, and in particular look forward to working with such passionate, and skilled bakers.”

Gail’s exclusively revealed to British Baker earlier this year that it had ambitions to expand out of the capital into places such as Oxford, Cambridge, St Albans or Guildford.

Molnar said at the time: “We are talking about the greater metro area - that’s all the scope I have really thought about seriously. If I were to go any further, I would have to think about moving everything over.”
