Scottish bakers Jenni Bone and Karen Oudnie this week created a metre-long sponge cake to celebrate the first birthday of Glasgow Children’s Hospital.

Oudnie, of West-Lothian-based Karens Crafted Cakes and Clackmannen-based Bone of Thistle Do Icely, used a total of 174 eggs to create the 1,000-slice cake, which took a marathon 110 hours to make.

A slice of the cake, a model of the hospital, was given to every patient in the children’s hospital, as well as the adult and maternity wards.

The bakers baked smaller sponges and then assembled the cake from three larger pieces on arrival at the hospital. When complete the cake measured 48 inches long, 12 inches wide and eight inches high.

The bottom layer was made up of chocolate cake and the top vanilla, raspberry jam and vanilla buttercream.

Oudnie and Bone volunteered to help the charity Scotland’s Superstars bake a cake for Glasgow Children’s Hospital Charity’s first birthday at its new premises. 

The hospital covered the cost of the ingredients, while the two bakers donated their time.
