Modern Baker has revealed its ambitions to improve the quality of carbohydrates in diets.

Co-founders Leo Campbell and Melissa Sharp told British Baker about their inspirations for setting up the business and how they hope to impact the public health agenda with its products.

Among the topics discussed were the French study that came out last week suggesting a link between wrapped loaves and a higher risk of cancer.

Modern Baker was set up in 2015 to focus on slow-carb baking – the production of lower glycemic index carbohydrates that are good for human digestive and gut health.
