Prince Harry and Meghan Markle have chosen organic baker and Violet Bakery owner Claire Ptak to create the cake for their upcoming Big Day.

Asked by the Royal couple to craft a creation that incorporates the “bright flavours of spring”, Ptak will be making a lemon elderflower cake that will be covered in buttercream, crowned with icing pearls, and decorated with fresh flowers, which are likely to be sourced from a local florist.

The Violet Bakery, in Hackney, emphasises using high-quality organic and seasonal ingredients in all its creations, with provenance, sustainability, seasonality and flavour as the main considerations, according to Ptak.

It is believed to be the first time a Royal couple has eschewed tradition, deviating from the time-honoured choice for Royals of a multi-tiered fruitcake.

In 2011, Prince William requested a ‘groom’s cake’ made of his favourite childhood treat: the chocolate digestive. On that occasion, the McVitie’s ‘chocolate biscuit cake’ was served alongside a traditional fruit cake.

Proprietor Ptak, like Markle, was raised in California and formerly worked as a pastry chef at Chez Panisse in Berkeley.

She opened the Violet Bakery in 2010 – which began as a market stall in East London – and also works as a food writer and stylist. Markle previously interviewed the chef for her online lifestyle magazine, which is no longer running.

Harry, fifth in line to the throne, and Markle will wed on 19 May at St George’s Chapel, Windsor Castle.
