Bakers gear up for royal wedding: part 2

The big day is nearly upon us and bakers across the nation have been frantically creating treats to celebrate the union of Prince Harry and Meghan Markle on 19 May.

From replicas of the couple’s lemon and elderflower cake from Violet Bakery, to biscuits that fuse together UK and US flavours, there’s a myriad of NPD for the occasion.

Doughnuts, afternoon tea and cheesecake featured in British Baker’s previous look at what has been created. Here’s what else is in-store:

Morrisons – Royal Wedding Cake

Morrisons is offering customers a slice of the royal wedding cake, well a replica at least. Its version, which costs just £7, consists of three 10-inch layers of sponge, lemon curd and whipped cream flavoured with elderflower. Its sides are decorated with white chocolate curls and topped with rose petals. Morrisons said the cakes were made fresh in-store and hand-finished by its 1,000 skilled cake-makers.

Electropac and Churchill’s – Musical Biscuit Tin

Snaffling biscuits from the tin just got more patriotic, thanks to a team-up between packaging specialist Electropac and confectionery firm Churchill’s. Filled with 150g of assorted biscuits, the tin features a host of famous London landmarks, from St Paul’s to the London Eye and Big Ben, and even plays the National Anthem or Rule Britannia when opened. They’re available on QVC.

Confection by Rosalind Miller – Crown Cake

This two-tier celebration cake is described as “truly fit for a prince or princess”, with a replica crown handcrafted from fondant icing, a painted edible gold tier and six layers of sponge. It’s available in a selection of flavours including those on the royal wedding cake – elderflower & lemon – as well as raspberry & vanilla, Belgian chocolate or Sicilian lemon. Confection by Rosalind Miller has also created ‘A Very English Garden Party’ – a rhubarb and elderflower cake embellished with meringue rosettes and pink pearls for the occasion.

McVitie’s – Chocolate Fudge Brownie Digestives

McVitie’s has combined one of the nation’s favourite biscuits, Chocolate Digestives, with an all-American flavour, the chocolate fudge brownie. The resulting biscuit has fudge pieces, cocoa and brownie flavouring added to the biscuit base before it is covered in chocolate topping. The flavour was chosen by fans on Twitter, beating Mississippi Mud Pie, Peanut Butter & Jelly and Pecan Pie. Just 50 packs of the limited-edition treats will be available for fans to win on McVitie’s Twitter.

Doubletree by Hilton – Royal Wedding Cookie

Guests visiting a Doubletree by Hilton hotel this weekend will be treated to a limited-edition version of its signature cookie. Inspired by the couple’s cake, the cookie is drizzled with elderflower and lemon icing and also features an edible message congratulating the couple on their special day.

The Detox Kitchen – White Bean Wedding Cake

London’s The Detox Kitchen is offering a wheat-, dairy- and refined sugar-free alternative to the royal wedding cake to mark the occasion. The lemon and elderflower cake is made from a white bean cake batter, lemon and elderflower curd and a lemon cashew frosting. It will be available in both The Detox Kitchen’s delis on Mortimer St and Kingly St for £3.75 a slice.

Miss Macaroon – Lemon and Elderflower Macarons

If a whole wedding cake is a bit much, Miss Macaroon has created some bite-sized morsels. The bright yellow treats, topped with edible flowers, are flavoured with lemon and elderflower. Miss Macaroon’s shop in Birmingham has also been spruced up for the occasion with a window display featuring a wedding dress and groom’s suit alongside macarons.

Rocket Food – Pudding Recipe

Marrying British summer fruits with ingredients from across the pond, London catering company Rocket Food has created a pudding recipe “fit for a royal”. The pudding is comprised of lemon butter and granola cake, gooseberry & elderflower semi-freddo with a blueberry compote on top. Rocket Food’s creative pastry chef Emma Davies developed it.
