Pastry chef Albert Adrià is to launch a cake café and sparkling wine bar inside London’s Hotel Café Royal this November.

Called Cakes & Bubbles, the Piccadilly-based concept will serve classics including egg flan with dark caramel, homemade doughnuts, “decadent” fruit cakes, light waffles with caramelised banana and Japanese-inspired chocolate ningyo yaki cake balls.

Adrià, who runs a string of restaurants including avant-garde tapas bar Tickets in Barcelona, will also introduce the signature ‘Tickets’ cheesecake, which has hazelnut notes and a non-traditional rind of white chocolate, as well a classic Spanish variant.

“I believe London is the capital of the world, and I’m looking forward to this new challenge,” said Adrià, who was voted the world’s best pastry chef by The World’s 50 Best Restaurants.

“It’s a project that excites me as a pastry chef – I’ve never opened anything specifically related to the sweet world. Our approach and menu will be a cross between the classical and contemporary. I am looking forward to bringing this concept to Hotel Café Royal, London’s only modern grand hotel and the place I feel I belong whilst in the city.”
