Dalston-based The Dusty Knuckle Bakery is to open a dedicated bakery school next month.

The school, which will hold its first class on 2 February, will be located in two converted 40ft shipping containers – one of which was The Dusty Knuckle Bakery’s first site when it was established in 2014.

In 2018, the bakery moved into a permanent space, allowing it to increase production and add a café that is open six days a week.

“We used to run classes a couple of years ago, but due to the pressure of running the bakery as well, they fell to the wayside,” bakery school coordinator Tomek Mossakowski told British Baker.

“We’ve always been a learning space and have taught dozens of bakers over the years, so this is just the next step. What’s great about The Dusty Knuckle is we have a really dedicated customer base, we’ve got loads of regulars, so the school feels like the next step towards creating a community.”

A former academic, Mossakowski worked for The Dusty Knuckle for a year, but left for another bakery. He re-joined the business in September 2018 to head up the educational development.

As a precursor to the dedicated space, the bakery has been holding classes on Wednesdays for the past few months. “We’ve already have people returning to the classes,” noted Mossakowski.

On offer will be a range of all-day, half-day and evening classes, covering topics such as ‘Introduction to bread’, Baltic baking, rye breads and sweet doughs. Seasonal classes such as Easter baking and barbecue breads will also be available.
