International baking consultancy BakeTran has launched an online technical training facility to help businesses improve their breadmaking and pastry skills.

The tutorials, which are split into modules, allow employees to study breadmaking technology in any location, which BakeTran said would enable them to develop technical knowledge and tailor it to their company’s products and processes.

Breadmaking Module One covers the essential elements in the manufacture of bread and fermented products, dough mixing, ingredients inputs and post-baking changes, among other things.

Future modules will include:

  • Flour quality and bakery products
  • Fundamentals of cake making
  • Laminated products and pastries
  • Water activity and its control
  • Problem-solving approaches

They are aimed at managers and technologists involved in the manufacture of bread and other bakery items who want to improve their technical skills.

“We believe the ability of employees to integrate their new knowledge directly into the businesses in which they work makes our offering different from that of other providers,” said BakeTran director Stan Cauvain.
