Pidy’s new handmade Technipat sponge sheets are aimed at the UK bakery and foodservice sectors, and are designed for Genoise and desserts.

Stored frozen, the sheets from the Belgian pastry products business have an 18-month shelf-life and can be used flat to make Genoise, as well as filled to produce desserts.

The collection includes plain and cocoa traditional sponge sheets as well flavoured sponges and those with inclusions, are stored as frozen product therefore giving a shelf-life of 18 months.

Produced by Technipat, which alongside Pidy is also part of the Biscuit Bouvard portfolio, the sponges are handmade and “offer exceptional flavour and a wonderful texture”, according to the company.

Produced using traditional recipes, the sponge sheets are made without artificial colours, emulsifiers or preservatives. The flexibility of the sheets also lends itself to being used flat to make beautiful Genoise, layered cakes or filled to produce stunning mini-desserts.

The sheets (580mm long x 380mm wide x 07mm thick) come in cases of six, can be stored in a freezer, are quick to defrost and can be worked individually as required.

Technipat sponge sheets will be available through the network of Pidy wholesalers and distributors in the bakery, foodservice and retail sectors.
