New Gluten Free Mozzarella & Pesto Toastie with Roasted Pepper Sauce

A gluten-free toastie and biscuit decorated to look like bubble tea are among the bakery bites being rolled out for Costa Coffee’s summer 2025 menu.

These are joined by a pair of filled flatbreads returning from the previous summer as well as sweet treats sticking around from this year’s spring season.

Costa’s brand-new Gluten Free Mozzarella & Pesto Toastie with Roasted Pepper Sauce (rsp: from £5.30), which has been approved by Coeliac UK to carry a Crossed Grain trademark, is available at selected stores nationwide. It features gooey mozzarella and mature Cheddar cheese, with smoky roast red pepper sauce and green pesto, packed into gluten-free seeded bread.

Other gluten-free bakery options on the coffee chain’s permanent line-up include Millionaire’s Shortbread and Belgian Chocolate Brownies, while it also offers a vegan and gluten-free Mince Tart at Christmas.

Costa has continued to roll out new seasonal designs for its iced gingerbread biscuits (from £1.90 each), with summer welcoming a colourful Bubble Frappé decoration. This follows on from heart-shaped designs for Valentine’s Day and the hatching chicks at Easter.

The Chicken Shawarma Flatbread and the Tandoori Bhaji Flatbread (from £3.95 each) are being brought back after successful runs last summer, while a trio of sweet treats – Chocolate & Pistachio Cookie Sandwich, Strawberry & Vanilla Cake, and Triple Chocolate Muffin – have had their availability extended past the spring.

“With delicious new and returning food items, from flavour-packed flatbreads to our Gluten-Free Toastie and seasonal sweet treats – there’s something for everyone to enjoy as part of their favourite Summer rituals,” commented Nishant Bhatia, Costa Coffee’s global food and beverage innovation director.

Other non-bakery newcomers at the retailer look to refresh customers during the warmer-weather months include a Watermelon Pot (from £2.35) as a juicy snack, and ‘Refresher’ iced drinks (from £3.80) in flavours of Strawberry, Watermelon & Mint or Dragon Fruit & Guava. On the coffee front, Costa has unveiled a new Tiramisu Frappé (from £4.20) and Tiramisu Iced Whipped Latte (from £3.85), along with a Vanilla Lavender Iced Whipped Latte (from £3.85) and Pistachio Latte – which is served hot or iced, available exclusively at its Costa Express machines nationwide.

With a total of 2,671 sites at the start of the year, Costa retained its number one position in our list of the top 75 out-of-home businesses as part of the Bakery Market Report 2025. However, its estate was reduced by six last year as it focused on revamping its existing stores and, in some cases, moving them to ‘bigger and better locations’ rather than opening new ones.

In February, it announced a 5% pay rise for around 15,000 employees from 1 April as part of an £8m investment by the business this year.
