Ingredients specialist Ulrick & Short has launched a starch designed to enhance flavour in lower-fat foodstuffs.
Called Delyte 9, the new ingredient brings “enhanced indulgence to lower-fat foodstuffs everywhere”, claimed the British-owned clean-label specialist
Delyte 9 is a tapioca-based non-GM clean-label starch suitable as a substitute for the majority of fats, including butter, oil, cream and milk solids, while also enhancing the formulation with increased body and texture.
“Aside from the clear advantages of reduced fat and calories, Delyte 9 can be used to co-texturise in its own right, thanks to its innate stability,” Ulrick & Short said in a statement.
Delyte 9 is also suitable for vegetarian, dairy-free and vegan products.
