Master Baker Wayne Caddy took Mono Equipment’s artisan bakery masterclass, and spoke to British Baker about his top tips for getting the perfect bake.

The sell-out course took place over two days, and saw bakers from all over the UK come to the Mono headquarters in Swansea to perfect and develop their artisan baking skills.

Wayne started his baking career in 1987 whilst studying and working in Yorkshire, and won the ’BIA Student Baker of the Year in 1995’. More recently he was part of Team UK in the Coupe Louis Le Saffre and is the first UK baker to compete in the prestigious Masters de la Boulangerie.
