It can hardly have escaped any baker’s notice that cupcakes are big business. One firm that could perhaps be considered a founding member of the cupcake movement is London’s Hummingbird Bakery, which has just launched its own cookbook.

Filled with recipes from its kitsch shop creations, Hummingbird founder Tarek Malouf reveals the secrets of its famous cupcakes, as well as muffins, brownies and bars, ring, layer and loaf cakes, cookies, pies and cheesecakes. For example, strawberry cheesecake cupcakes, banana loaf, key lime pie and spinach and cheese muffins, are just some of the recipes contained within. And if the names of the products aren’t temptation enough, the photography, by Peter Cassidy, certainly is.

The cookbook includes background information on the bakery’s beginnings, before moving on to the different types of frostings available for cupcakes. The recipes are designed to be easy to follow, with detailed methods and photos.

Malouf has shops in Portobello Road in Notting Hill and Brompton Road in South Kensington, with a new branch soon to open in Soho. Hummingbird sells more than 20,000 cupcakes a week.
