This week British Baker met Michel Roux Jr – two-star Michelin chef, TV star, and, as we discovered, passionate baker.
We caught up with Michel Roux Jr on the Bridor stand at Hotelympia in London. His connection with French bakery specialist Bridor is a longstanding one, and he was keen to tell us all about why he enjoys being involved with the company.
But he was also keen to talk about his love of patisserie, pastries and, in particular, bread – be it a Chelsea bun, a sourdough loaf, or a classic old-fashioned bake.
He offered advice for those wanting to get started in the baking industry, and also talked about the very topical sugar debate – and what it means for the future of patisserie.
