Stefano Nicolai, managing director and founder of Spianata&co, talked to British Baker about the company’s sixth outlet opened this week in Mayfair, London.

The Italian bakery and sandwich food-to-go firm based in the capital is looking to take its store count to eight in the next 12 months and will be adapting the look of its new Mayfair outlet to its five exisiting London sites.

Features of the new retail bakery include cold-lit ceramic shelves and no refrigeration for its sandwich offering so that the quality of ingredients does not decline and the firm can demonstrate how fresh products are delivered from its bakery every morning.
