Michelle Phillips, founder of Edinburgh-based Mimi’s Bakehouse, has been awarded £100,000 from the Stelios Awards for Disabled Entrepreneurs 2025.

The awards, established in 2007 by EasyJet founder Sir Stelios Haji-Ioannou as part of his Stelios Philanthropic Foundation, recognise the remarkable achievements of disabled people who have launched and run their own businesses in the UK. This year saw a record 125 applications, the highest number in the awards’ history.

Phillips, who has multiple sclerosis, came in second place. She was secretly nominated for the award by her daughter and Mimi’s Bakehouse chief operating officer Ashley Harley.

She now plans to use the prize money to revamp the business’ brand and cafes as well as expand into new markets.

“I am delighted to win this award,” said Phillips. “As well as cafe refurbishments and a brand refresh, the plan is to relaunch the UK-wide online bakery and release a retail product with a longer shelf life to allow the business to add new revenue streams and to export all over the UK and maybe beyond.”

While the exact details of the new products are under wraps, Harley confirmed that Mimi’s is looking to make waves in the grab and go/indulgent snacking space. As for online sales, currently 20% of the bakery’s sales comes via its online platform with the revamp aimed at doubling this.

Phillips started Mimi’s Bakehouse in 2010, at which point she already had symptoms of multiple sclerosis. She was diagnosed a year later and has faced increasing challenges with her mobility.

“Using a stick or crutches whilst running a business makes you realise just how much you do on your feet,” said Phillips. “Recently, I have not been afraid to ask for a seat where needed, so it is important to me that all Mimi’s Bakehouse locations are disability-friendly and that our staff are trained to help these customers without them having to ask.”

The business now has seven locations across the city, including two concessions, from which it serves a range of cupcakes, savoury brunch dishes, afternoon tea, celebration cakes, and more.
