Tate & Lyle has introduced two new instant starch products to help food manufacturers tap the clean-label bakery trend.
Joining the Claria Functional Clean-Label Starch line-up, Claria instant 340 and 360 starches are aimed at helping manufacturers meet demand without having to make trade-offs in taste, texture, colour and performance, the company said.
The starches can be used in a variety of applications, from pastry fillings and creams to soups and gravies, with benefits including immediate viscosity in high-solid systems such as fruit fillings, easy texture building in cold-processed applications and bake stability control, the food ingredients provider continued.
“We developed the Clara Instant line of starches to deliver on several attributes, including process tolerance for use in demanding applications, rapid viscosity build for soups and gravies, and boil-out prevention characteristics for fillings,” said Jim Smoot, senior manager texturants R&D, Tate & Lyle.
“It also has to be as easy to use as comparable modified starches, while possessing the required white colour and clean flavour profile consistent with other Claria starches. We are excited to say that new Clara Instant starches deliver on that promise.”
According to Tate & Lyle, one in every five ‘clean-label’ launches in 2016 was in the bakery category.
