Waitrose has rolled out a range of cupcakes and celebration cakes for spring 2021.
The array of new treats are designed for afternoon teas and birthdays, featuring classics, like carrot cake, and quirkier delicacies such as a beehive-shaped cake.
Part of its food-to-go ordering service, the cakes are made exclusively for Waitrose by Fiona Cairns bakery in Leicestershire. Consumers can find the range in-store or online.
The trend for afternoon tea and increase in at-home celebrations is set to continue into 2021, it said.
“We saw sales of teatime cakes rise last summer by 95% which led us to develop a new offer of afternoon tea and celebration cakes, reflecting the demand for celebratory food and drink,” said Rosie Hancock, bakery product developer at Waitrose.
In the last week alone, searches on Waitrose.com are already up over 1000% versus the same week last year as families turn to celebratory food and drink to mark their events in lockdown, it added.
”With the current lockdown restrictions, we’re all seeking ways to make birthdays and other events really special - even if we can’t celebrate them with others outside our household.Cake is one of the little luxuries we can enjoy at the moment, so indulging in a treat of afternoon tea is the perfect way to celebrate an occasion.”

Toadstool Cake – £40
Don’t be fooled by this toadstool! This fairy-tale cake is made up of a golden sponge with a vanilla buttercream and raspberry jam filling. It’s covered in soft icing with sugar-paste decorations and royal icing. The cake can be personalised and bought alongside Toadstool & Dragonfly Cupcakes which are available in packs of 12 for £14.
Loaded Chocolate Drip Cake – £28
Calling all chocolate lovers! This sponge cake is filled and covered with chocolate buttercream. Topped off with chocolate-flavoured icing with a drip effect, it also features marble chocolate shards, dark chocolate disks and milk chocolate crisp pearls. The cake, which can be personalised, is completed with a dusting of gold lustre.
Beehive Cake – £35
This two-tier beehive-shaped cake comprises a moist chocolate sponge covered in pale yellow soft icing and sugar-paste bees. The bottom tier is made up of chocolate sponge with yellow vanilla-flavoured buttercream filling, covered in soft white icing and decorated with sugar-paste flowers.
Carrot Triple Layer Cake – £20
A traditional teatime classic, this three-layered carrot cake is sandwiched and topped with a yoghurt and cream cheese flavoured frosting. It is also sprinkled with chopped pecans.
Chocolate & Salted Caramel Triple Layer Cake – £20
This rich chocolate sponge is filled and topped with salted caramel buttercream. A mixture of sweet and savoury, the cake is topped with a dusting of toffee pieces.
Dinosaur Cake – £40
The Dinosaur Cake features a golden sponge with vanilla buttercream and raspberry jam filling. Covered in a soft green icing, it has sugar-paste decorations of in the form of red spikes and yellow spots. Consumers can purchase matching cupcakes priced at £14 for 12.
Victoria Sponge Triple Layer Cake – £20
This Victoria sponge is a twist on another traditional teatime classic. Made up of three layers, it features a hand-piped buttercream and raspberry jam filling. A dusting of icing sugar tops off the look.
Lemon Triple Layer Cake – £20
Described as sumptuous, this lemon sponge is filled and topped with tangy lemon curd. Complete with buttercream, the cake is enriched with lemon juice and lemon oil.
