Gluten free bread is essentially [bread flavoured cake] ; based on starches, gums and sometimes egg rather than gluten-containing-wheat.
The low price of bread is principally due to the massive industrialised process keeping costs down. Even gluten free bread plants are not on the same scale.
Also, gluten free products need expensive tests and additional checks in the supply chain.
The price of gluten free bread is almost the same (per 100g) as cake..Over the last 30 to 40 years consumption of white sliced bread has continued to fall whilst seeded and other bread sales have risen.
People are eating a lot less white bread than previous generations.
If white bread is the cause of obesity and other diseases you'd expect these diseases to fall with the falling consumption.
