East London-based sourdough bakery Today Bread has reached out to the community to help fund a new Ramalhos oven on its premises. 

The company is looking to raise £9,000, via a Kickstarter campaign, to buy the new oven and, as of 11 July had reached just over £6,000 in funding. It is offering a series of rewards in exchange for funding; for example, a £50 donation will buy the funder three months’ worth of bread, plus a variety of other incentives. However, funding can be from as little as £1.

Today Bread was set up by Alexandre Bettler in 2014, who quit his role as a designer to fulfil his dream as an artisan baker. Bettler started his new business with a small team of bread enthusiasts - baking over 400 loaves of bread a week in an unreliable pizza oven in a small room at his home in Clapton.

However, the team wanted to expand to run food-related workshops and events, as well as being an important part of the local community, and the company has recently expanded into new premises in Walthamstow as part of a creative hub.

Today Bread spent months looking at ovens around the UK and went on road trips, visiting bakeries late at night and speaking with bakers across the country. It has now found what it considers to be the perfect oven, the Ramalhos, which it says will allow it to bake high-quality breads.
