I totally agree that many bakeries are really pushing the baked envelope these days. It's a real joy to see so many with queues outside and the teams inside relishing their jobs. But you're right in that some fail to live up to the social media hype, but those are the ones who won't last.
He is completely ignoring the facts that the label on a Chorleywood made loaf is full of what defines a UPF. His product is a totally different animal to a genuine Real bread loaf that contains just flour, salt, yeast and water. It offends me as a Real Bread baker to have my bread lumped into the same category as his chemical laden offerings.
But I am looking forward to the webinar. All this research of shoppers requirements really supports the work of the Real Bread Campaign. An Honest Crust Act is what is needed to give consumers the clear information they need to make an informed decision on how to tell sourdough from sourfaux.
