Tapping into growing demand for products using ancient grains, cracker brand Sprouted Genius has created tubs for foodservice.

Described as the first of their kind in the UK, restaurants, bars and cafés can use the sprouted flour crackers for cheese-boards and canapés, said the supplier.

They are available in three varieties: Amaranth & Beetroot; Purple Corn, Sea salt and Black Pepper; and plain Amaranth.

Baked using wholegrain organic sprouted flour, the crackers are combined with wheat to give them a good ‘snap’. Flavours such as black pepper and beetroot have also been added.

With a more complex flavour and texture than traditional flour, sprouted flour is also marketed as being healthier.

Grain is essentially transformed from a starch into a vegetable during the sprouting process, increasing overall vitamin content, making it easier to digest and producing less gluten.


The firm was awarded ‘Best Artisan Product’ at the World Innovation Awards last month.
