The School of Artisan Food will be developing a full-time patisserie diploma and a suite of professional baking courses throughout 2012.

The Nottinghamshire training establishment will be creating an advanced full-time patisserie course in the next year, the fourth element of its existing Advanced Diploma programme, including bakery, butchery and charcuterie, and dairy. The 10-month diploma will be the equivalent of an undergraduate degree and taught by a team of industry professionals.

Sheila Russell, director of studies, said: "It will be an intense five-days-a-week course, requiring students to learn practical and theoretical elements, including business studies, food quality and culture."
