Gluten-free Confetti Cake, Just Love Food Company

Having seen its Happy Birthday Cake triumph in the Free-from Bakery Product of the Year category at last year’s Baking Industry Awards, Welsh manufacturer Just Love is expanding its allergen-free range with a new gluten-free Confetti Cake.

The cake, which is also milk and nut free, comprises three layers of vanilla sponge with a plum and raspberry jam filling, hand finished with vanilla frosting and topped with colourful sugar sprinkles. It serves 16 and has been launched exclusively into Waitrose stores across the UK, with a rsp of £16.

Just Love said its research highlighted that parents love to customize their shop-bought celebration cakes, and so has included a QR code on packaging to take consumers to its webpage with ideas and inspiration for unique decorations. The packaging also features a cut out allergen label to stand next to the cake, helping party guests make informed choices.

Bakery supplier Délifrance has rolled out a new premium viennoiserie products range called Les Passionnés as part of its Héritage collection, consisting of a ready-to-bake croissant and pain au chocolat.

The new products have been created using responsible sourcing and with high-quality standards in place, as well as carefully selected ingredients such as sourdough, fine butter, free-range eggs, Rainforest Alliance-certified cocoa, and French flour. This helps ensure a responsible and clean label approach, which is said to be in line with Délifrance’s ‘Go Clean’ policy.

Sold frozen in boxes of 60, both the croissant and pain au chocolat are available from national wholesalers.

Family-run firm Just Desserts Yorkshire, which is based in the historic Salts Mill in Shipley near Bradford, is sweetening up its range of 130 handcrafted desserts (which includes recently launched individual cheesecakes) with a trio of loaded brownie traybakes for foodservice and hospitality outlets.

The traybakes comprise a chocolate brownie base topped with either:

  • sweet cookies, crème buttercream, and crushed Oreo’s
  • Lotus flavoured buttercream and crushed Lotus biscuit
  • soft fudge icing, Maltesers, and a sprinkle of white chocolate blossom

They are priced from £17.50 per tray, which affords 12 servings.

Belgian pastry specialist Pidy has unveiled its new range of flavoured macaron bases said to boast improved smell, taste, and texture.

Made using a traditional method for a smooth, fine, crunchy finish, the macarons are available in two sizes. The large macarons are 6.9cm in diameter and come in packs of 64 with a choice of neutral, chocolate, or raspberry flavours. The mini macarons, meanwhile, are 3.5cm across and available in packs of 180 in neutral, chocolate, raspberry, and newly added pistachio.

Foodservice operators are recommended to refrigerate the macarons for between two to four hours once they have been filled so that they become moist inside. They can then remove them for around 15 minutes before serving to let them return to room temperature.

Freezing the macarons after filling is also an ideal option for caterers looking to prep ahead of busy events. They have a shelf life of 10 months.

Lancashire wholesale foodservice buying group Country Range has relaunched its range of mousse-like Delight mixes with an improved recipe.

The classic flavours of strawberry, chocolate, and banana are available in 600g, and can be whipped up quickly with milk or water before use in bakery items such as cheesecake or trifle.

“Nostalgic desserts and flavours continue to be on trend this year, so we expect them to be key SKUs in 2024,” said Country Range Group marketing manager Rachel Porter.
