Last week, British Baker visited Le Cordon Bleu in London to gain an insight into the company’s new diploma, the Diplôme de Boulangerie, and speak with guest chef Paul Rhodes who provided a bakery demonstration.

More than 100 guests attended the demonstration to learn tips from Rhodes on how to make focaccia and soda bread.

Rhodes has been head chef at Michelin-star restaurants and now owns Paul Rhodes Bakery, one of London’s leading independent bakeries.

He gave his thoughts on the new bakery diploma and the re-branding of his business.
