Dominique Ansel’s DAB London Bakery has unveiled two new seasonal pastries.
Available now, the autumnal pastries include a new Poached Pear & Salted Pecan Caramel Tart and a Fig & Mascarpone Cream Cake.
The Poached Pear & Salted Pecan Caramel Tart, which is priced at £6.20 to take away and £7.50 to eat in, is made with ripened poached Williams pears and salted pecan caramel, as well as smoked Tahitian vanilla and honey ganache.
The Fig & Mascarpone Cream Cake, priced at £6 to takeaway and £7.20 to eat-in, comprises coloured Turkish figs, mascarpone cream mousse with rosemary and brown sugar financier.
Ansel, who is known for his innovations in patisserie such as the Cronut, opened his first European bakery in Belgravia, London at the end of September and has produced baked products for occasions including Valentine’s Day, St George’s Day and Father’s Day.
Ansel was named the World’s Best Pastry Chef at the World’s 50 Best Restaurants at a ceremony in Sydney, Australia, in April this year.
