Ingredients supplier Dawn Foods has introduced a pistachio flavour it is range of fonds - cream stabilisers for a variety of dessert applications.
The new Pistachio Fond, made with all-natural flavours, can be used to colour and flavour lightly whipped dairy or non-dairy cram to create a set mousse in minutes. Bakers just mix 200g of Pistachio Fond with 200g of water (at 20C) and gradually fold in 1000g of whipped fresh cream.
The mousse can the be used in many applications from topping cupcakes and muffins, layering gateaux and cheesecakes, filling sponges and choux pastry, topping tarts and sandwiching puff pastry, said the firm. The new fond features real pieces of pistachio for added texture.
Other flavours in the fonds range include fruits of the forest, raspberry, lemon, strawberry, peach & passion fruit, white chocolate, cappuccino, ruby orange and a neutral base for a flavour addition. The fonds are freeze-thaw stable.
The Pistachio Fond comes in 5 x 1kg boxes, with other flavour options available in 2 x 2.5kg and 20kg versions.
