Edinburgh-based bakery Twelve Triangles is to open its first branch outside of the city in October.
Representing the bakery’s eighth retail site, the shop, previously home to The Bakehouse, is located on Melrose’s high street.
From there, Twelve Triangles will offer a full range of signature sourdoughs as well as fougasse, ciabattas, focaccia, baguettes, and rye bread. All products are made from scratch using cold/slow fermentation on a three or four-day cycle with everything shaped by hand, the business noted.
Alongside a classic pastry selection there will also be Twelve Triangles twists such as twice baked croque monsieurs, bramble & pistachio croissants and baklava buns. These will be served alongside a selection of hot and cold drinks including freshly made juices and Fortitude coffee.
Purple Plum greengrocer and Martin Baird butchers, both located in Melrose, will supply the bakery with produce to prepare house-made soups, sandwiches and toasties, which will be available to take away or enjoy at a table in the seating space for up to approximately 10 people.
Twelve Triangles is run by Rachel Morgan and Emily Cuddeford. It currently has seven stores across Edinburgh and has been a regular trader at the Faldonside Farmers Market.

The new site will generate additional jobs and, as such, the business is on the hunt for people looking to join an ‘engaging team with real artisan baking at its heart’.
