Charlotte White, founder of Restoration Cake, gave a presentation of her cake decorating skills at the recent Farm Shop and Deli Show 2016.
Afterwards, British Baker caught up with her to discuss how to get into cake decoration and the key trends for the summer.
She told us that big cakes were a hot trend at the moment, saying “bigger is better”. She advised bakers currently making their cakes in two sandwich tins double their ingredients and spread their mix across three tins.
She also listed the key pieces of equipment every baker needs to start decorating, which included a turntable, a crank-handled palette knife and a side scraper to tidy up edges when icing with buttercream.
