The waste hierarchy sets out the options for managing waste in terms of what is best for the environment, and must be taken into account by any organisation that produces waste.
In this feature we will explore the cost savings that can come from bakeries giving more thought to pushing their resources up the waste hierarchy as well as the social and environmental benefits of doing so. Plus, the best way to inform to shout about it to your customers for maximum effect.
We will look at all stages of production and consumption in a bakery setting such as what to do with flour sacks and plastic straws, leftover products and ingredients as well as coffee cups.
