Wayne Caddy and Mickael Jahan will represent the UK in The Louis Lesaffre Cup, after winning two categories in the UK national heats at the Baking Industry Exhibition earlier this week.
The UK heats, held in the Live Bakery saw Caddy triumph in the Bread category, while Jahan came top in Viennoiserie. Caddy currently runs a consultancy called The Essential Baker. Jahan is new product development manager at Grain D’Or Bakery. ABST general secretary and bakery lecturer David Mizon took part in the heat for the Artistic Piece, with the judging for this category to take place at a later date.
The entries were judged by Rank Hovis’ technical sales manager Colin Lomax, Fermex’s bakery specialist Sara Autton, national president of the National Association of Master Bakers (NAMB) Neil MacSymons and director of Bako and past NAMB president Peter Lonican.
In the bread category, candidates were required to produce artisanal baguettes, two breads typical to the UK, oven-bottom loaves and bloomers. The Viennoiserie candidates were required to make croissant, pain au chocolat, two varieties of Danish pastry, a brioche product and a pasty product typical to the UK all with either risen dough or flaky pastry. The artistic piece made from edible dough had to sum up the ’spirit of the UK’.
Caddy told British Baker it was a pleasure to be able create good British products well, using traditional techniques. He said: "In these sorts of competitions, there’s no hiding you’ve got to come up with the goods on the day and think on your feet. I had a very good baking day my bloomers were blooming!"
The next stage of the contest the international selection rounds will see the UK team compete against teams from Western Europe, in Paris in May 2011
