Moul-bie has launched a clean-label solution that can achieve a 25% reduction in salt without losing flavour or affecting crust formation, it is claimed.

Fermitec SR-25 acts as a straight salt replacer, without the need to change your recipe, said the firm. The 100% natural ingredients list includes wheat flour as a carrier, salt, deactivated wheat sourdough, deactivated yeast and fermented wheat flour. EC directive 1924/2006 allows the "reduced salt" claim to be made on products, said Moul-bie.
