Pastry chef Will Torrent took to the stage at the Farm Shop & Deli 2016 to talk about one of his great loves, chocolate.

In his seminar, he showed the audience how to temper chocolate using a microwave as well as discussing the relationship between cocoa beans’ country of origin and flavour.

British Baker caught up with Torrent after his talk to explore these themes further, along with finding out how bakers can use artisan chocolate to add value to their products.
