Eric Lanlard, star of Channel 4 TV series Baking Mad, has developed a twist on the traditional Victoria sponge recipe for the Queen’s Diamond Jubilee celebrations.
The patissier and judge of last year’s National Cupcake Championships, organised by British Baker, has created the recipe exclusively for Sainsbury’s, available in-stores and on its ’Live Well For Less’ website from 23 May to 13 June.
The cake recipe, which serves 14 people, includes the traditional sponge with a strawberry cream filling, decorated with mixed berries, fresh strawberries covered in white and dark chocolate, and mint.
Lanlard said: “The Jubilee is a once-in-a-lifetime chance for the nation to get together and celebrate an extraordinary sovereign, who has been on the throne for over 60 years. This is why I created this Elizabeth sponge cake recipe – my take on the classic Victoria sponge, with a contemporary twist and look. It’s easy to make at home with the finest ingredients and looks fantastic on any party table.”
