The winning team from this year’s Bake Off: The Professionals have created an afternoon tea inspired by their time on the Channel 4 show.

Pastry chefs Emmanuel Bonneau and Sam Leatherby, from the London Hilton on Park Lane, fought off 11 other duos, including teams from Bom Bom Patisserie and The Savoy, for the crown.

In celebration, the hotel is launching an afternoon tea inspired by the pair’s journey through the competition that will be served in the Podium Restaurant & Bar and priced at £39 per person.

Menu items include a Black Forest gateaux deconstruction – from the first elimination round – as well a passion fruit and strawberry fruit tart, served in between two shortbread biscuits, finished with fresh berries, mango jelly, passion fruit seeds, a red chocolate feather and golden leaf.

From the second round is the duo’s adaptation of a traditional praline roulade, which consists of a hazelnut dacquoise and praline with a mandarin jelly centre.

Inspired by Bonneau’s favourite childhood pastry memories, the celebration tea will also include caramelised banana milk chocolate macaroons, as well as a miniature version of the three-tiered piña colada cheesecake from the live plating semi-final.

A variety of plain, raisin and chocolate chip scones will also be served, with strawberry jam, Cornish clotted cream and salted caramel spread, alongside a selection of teas.

“We’re extremely proud of Emmanuel and Sam’s achievement. We are so pleased for them, it is a testament to the hard work and high standards they show every day at The London Hilton on Park Lane,” said executive chef Anthony Marshall.

“We can’t wait for everyone to experience a taste of the Bake Off with our exclusive Afternoon Tea featuring our favourite creations from the past 10 weeks.”

The London Hilton on Park Lane will be the venue for the Baking Industry Awards ceremony in September.
