Eco-friendly bakery Söderberg to open in Soho

Swedish artisan bakery Söderberg is to open its first London-based café on Berwick Street, Soho.

Set to open this month, the café will join Söderberg’s existing portfolio of six cafes in Edinburgh.

Its new London branch will offer visitors Swedish food including open-style sandwiches, smörrebröd, bread and pastry, as well as treats such as its signature Kardemummabulle (cardamom buns) and Kladdkaka (chocolate cake).

The café will also provide sit-in brunch and takeaway breakfast and lunch options, as well as coffee roasted in Sweden, Scandi-inspired cocktails, wines and craft beer.

Spanning two floors and 1,800 sq ft, the café will incorporate Scandinavian design, with custom-made concrete counters and industrial bakery racks complementing contemporary furnishings from Scandinavian designers.

It will also champion sustainability and use responsibly sourced ingredients, both in-store as well as at supplier level. Its flour is supplied by Shipton Mill, which utilises Soil Association-approved organic farming practices and has a solar generation scheme generating 20% of the energy it consumes.
