Baking powder supplier Kudos Blends has acquired a new oven to improve its internal product analysis and trials.
The business has replaced the oven at its test bakery in Cleobury Mortimer on the Worcestershire/Shropshire border with a MIWE condo oven supplied by EPP.
Kudos Blends supplies baking powder to industrial bakeries for products including cakes, doughnuts, crumpets, and tortillas. Its test bakery analyses baking powders and perform trials on behalf of customers to troubleshoot problems or try new bakes.
“Because we analyse products and need to have very precise figures, we needed a good oven that would produce consistent product,” explained Stephanie Morrison, the company’s senior bakery technologist.
“We bake on three or four decks at the same time. If there are any inconsistencies in the bake, the analysis is unreliable to start with. Our previous oven had started to develop hotspots which was causing issues for us”.
A chance meeting with Michael Lomas, sales manager at bakery equipment supplier EPP, led to Kudos Blends visiting the Puratos Innovation Centre to see a MIWE oven and perform a few tests, after which they decided to buy a four-deck condo.
“We’ve been very pleased with the oven since we made the investment,” said Morrison. “We trialled various products in the oven, and we tested the consistency from one side of the oven to the other, as well as consistency between the decks – it’s so much better than our old oven. It also heats up much faster than our previous oven and saves a lot of energy.”
Morrison added that previously staff would have to use one deck and wait to reuse the same deck to ensure testing consistency, but now have multiple reliable decks that enable staff to bake several batches of products at a time.
Founded in 1999 by female entrepreneur Dinnie Jordan, Kudos Blends has developed more than 100 different baking powders tailored to specific products, including solutions for sodium reduction, gluten free and vegan goods.
