A bakery expert from sweet bakery manufacturer Mademoiselle Desserts is set to join the panel for British Baker’s webinar on clean label and ultra-processed foods (UPF).
The free webinar, sponsored by AB Mauri and Ulrick & Short, is titled ‘How are the UPF and clean label movements shaping bakery?’ and will take place at midday on Wednesday 16 October.
Garry Hewings, product development controller at B-Corp certified Mademoiselle Desserts, rounds off the expert panel which includes a bakery specialist from The Co-op and chief executive of trade body the Federation of Bakers.
Hewings has worked in product development for the UK food industry for more than 30 years in organisations such as Heinz, Uniq Prepared Foods, and Greencore. He now works as NPD controller for Mademoiselle Desserts at its site in Taunton – the firm has two other UK sites in Maidenhead and Corby with nine further across the Netherlands, Belgium, and France where its headquarters are. Its UK sites produce sweet treats, including cheesecakes, brownies, muffins, and cakes, for a myriad of foodservice and retail customers.
A major part of Hewings’ role is heading up the Clean M and Nutri M teams for Mademoiselle Desserts UK, which classify the ingredients used as part of a clean label scale to ensure the cleanest ingredients are used and the best nutritional standards are met.

During the hour-long webinar, the panellists will get to grips with what UPF and clean label mean for the baking industry, particularly those who have built their businesses around large-scale production. They will also dive into how firms can make the most of the conversation around ingredients and processing methods.
There will also be a live Q&A session in which the audience can submit questions to be answered by the panel. These can be submitted during the webinar or as part of the sign-up process.
