Bakers have unveiled a raft of sweet baked goods for summer, with biscuits, cakes, tartlets, and brownies among the new products to hit the shelves.

A fruity sponge cake, indulgent chocolate cookies, and even a brownie celebrating the launch of the new Barbie movie are among the line-up.

Sweet bakery specialist Baker & Baker has brought its Brooklyn Coffee Bar cookies to the UK.

The thaw and serve range consists of two flavours – double chocolate and rich chocolate.

The rich chocolate variant is made from a dark chocolate dough with a hint of vanilla, packed with white & dark Belgian chocolate chunks. Meanwhile, the double chocolate cookie is packed with dark Belgian chocolate chunks.

The business noted that the individually-wrapped cookies were designed to support growth in the food-to-go sector by offering soft eat American-style cookies with the quality of a freshly-baked one but the convenience of a wrapped product.

Crosta & Mollica has added to its range of traditional Italian-made bakery products with the launch of the Apricot Crostata.

The tartlets use ‘pasta frolla’, a light and flaky Italian pastry, for its crust. This is smothered in a layer of apricot conserve and topped with criss-crossed patterned pastry.

The Apricot Crostata (40g each) are available in Waitrose, priced at £3.50 for a pack of four.

Vegan cake specialist Cake or Death has given a sparkling makeover to its ‘superbly tart’ raspberry brownies to celebrate the release of the new Barbie movie.

The brownies are topped with pink-coloured white chocolate, sprinkles and Barbie’s catchphrase ‘You Can Be Anything’ in white chocolate letters.

Priced at £30 for a box of 10 brownies (Barbie not included), they are available for home delivery nationwide.

The Ginger Bakers development team has created the Salted Caramel Jewel Bar, which they are predicting will be the ‘jewel in our traybake crown’.

The gluten-free traybake features an oaty shortbread base topped with a thick layer of salted caramel, freeze-dried raspberries, pumpkin seeds, and dark chocolate pieces.

Cut into 18 portions (rsp £30), the Salted Caramel Jewel Bar is available at selected retailers or via online order for nationwide home delivery.

The individually-wrapped novelty gingerbread bees from Yorkshire craft bakery Lottie Shaw’s are baked to a traditional family gingerbread recipe.

They come in either boxes of two (£3.95) or a dozen (£21), available for home delivery via online order or click & collect at the bakery in Brighouse near Huddersfield.

Online cake retailer Sponge has bolstered its line of baked sweet treats with a new cake to celebrate the summer season.

The Summer Special cake is a lemon-infused sponge with pockets of blueberries, smothered in creamy white chocolate and blueberry buttercream.

‘Head of Sponge’ Richard Fowler called it “the perfect treat to make all your favourite summer moments just that little bit better”.

The cake serves eight people (£16.75), and is available for purchase online.
