With a focus on functionality, flavour, and cost saving, they offer bakers a variety of benefits for different products, including support for vegan or sustainability claims.

Souplesse and Chocuise coatings, Dawn Foods

As part of the latest phase of Royal Steensma product roll-outs for UK and Ireland bakers, ingredients supplier Dawn Foods has unveiled five new flavours in the Souplesse range of flexible bakery coatings: Café, Blueberry, Pistachio, Caramel, and Milk Chocolate.

As a fat-based coating made with RSPO-certified segregated palm oil, Souplesse can be warmed gently before being used to coat, dip, or flood bakery products ranging from doughnuts and layer cakes to traybakes.

Meanwhile, with further hikes in cocoa prices expected in 2025, Dawn has launched Chocuise as a cost-effective coating alternative to chocolate. Available in dark, milk, or white options, it gives a smooth finish without the need for tempering for the likes of doughnuts, pastries, and muffins, Dawn Foods said.

As the craze for caramel continues in 2024, Dawn Foods UK and Ireland has also launched a versatile salted caramel filling for muffins, cakes, pastries, or doughnuts that is ready to use straight from the pail, with no need to heat. It is made to an authentic recipe using condensed milk that gives a rich, indulgent sweetness with a hint of sea salt.

Daymer has signed a distribution agreement with Dutch food-tech company Revyve to offer its natural, sustainable texturising ingredients to UK food and beverage manufacturers including bakers.

Revyve’s yeast-based egg replacement line is said to deliver a unique combination of proteins and fibres to impart egg-like texture and functionality whilst being price competitive and supporting clean label. The recently launched gluten-free ingredient, meanwhile, is fully neutral in flavour and colour which makes it ideal for flavour-sensitive products like sweet bakery, the firm said.

The ingredients are created with Revyve’s patented technology, involving a gentle process to micro-mill the baker’s yeast and then separate the valuable protein and fibres whilst maintaining native functional properties. This ensures they offer exceptional heat-set gelling, binding, and emulsification.

Plant-based ingredients supplier GNT has added its first paprika emulsion its Exberry colour portfolio, enabling manufacturers to achieve clean-label orange shades in a vast array of food applications such as bakery and confectionery.

The shade – available in either water dispersible or oil-soluble options – is made from non-GMPO paprika and offers high intensity colouring that allows for cost-effective low usage levels. Created using physical processing methods and without the use of chemical solvents, it is classified as a food ingredient rather than an additive and does not require E numbers, the business explained.

Bakers are encouraged to get creative with their offerings following the rollout of a 1kg Nutella cartridge. The latest innovation from Ferrero Foodservice allows operators to pipe, top, or fill a host of goods with a portion of Nutella, ranging from pancakes and waffles to croissants and eclairs.

The cartridge comes ready to use with three options of nozzles. It’s also compatible with both the Nutella electronic and manual dispensers, which have been found to help reduce waste to less than 4%.

“The Nutella Cartridge adds a new dimension to hotel, café, and bakery offerings as it allows operators an easy way to incorporate Nutella into their products and premiumise their offering with quality ingredients, that taste delicious,” commented Zareen Deboo, foodservice shopper activation manager at Ferrero UK & Ireland.
